Black Bean and Tofu Lasagna

Yesterday a terrible thing happened to me.  I went to my fridge to get some spinach and other vegetables to make some dinner.  When I opened the fridge, which I hadn’t opened for several days due to eating not cold things and going out, a very foul stench greeted me.  The smell of spinach and asparagus that had gone bad.  Totally gross.  So I threw them away.  Totally wasteful.  Then I got a little bit nervous, thinking about how today is Tuesday and I am leaving next week to go on a trip and food will go bad, and I don’t to have to do what I did before I went to New York, which was throw out all sorts of good stuff, etc.  I was worried, so I went to bed.

Then today happened.  Still reeling from the thrown out spinach episode of Monday, I decided to cook.  Here’s the thing though.  Despite being excited to whip up something interesting that would use all the veggies I had stored up in the fridge, I forgot about how there were actually very few veggies left in the fridge.  The eggplant that I thought was still there was actually eaten on Sunday.  The spinach and asparagus had been thrown away, the mushrooms got caught up, along with the peppers, in a Saturday evening omelet.  Instead of having to worry about creating a dish that would use up all my perishables, I had to concern myself with creating a dish that could be made from only the few perishables I had.  Really, the only things left in the fridge was tofu and vodka.  So I took a nap, determined to figure this thing out later in the day.

Then I wake up from the nap, it’s about 5 o’clock, and I’m hungry.  Now all thoughts about using up stuff in the fridge pretty much  had gone the way of the polar bear, so I could just make whatever I felt like.  I felt like lasagna.  Here are the ingredients:

  1. One box of no-boil lasagna noodles
  2. One can of black beans
  3. One block of tofu
  4. One jar of tomato sauce, maybe 32 oz?
  5. Probably too much oregano.
  6. Probably too much of that other thing I put in there

I drained the tofu and beans, mashed up the tofu, mixed it with the beans.  Then got a 9×9 Pyrex baking thing, covered the bottom with olive oil, put on a layer of noodles, layer of tomato, layer of my tofu/bean mix, etc. etc. until the pan was full.  Then I put it in the oven, covered, until I was hungry.  Which was about an hour later.  Then I uncovered it and tried to eat it.  It was too hot.  So I let it sit for awhile.  Then I ate it.  It was delicious!!!!  Then I ate too much.  I am stuffed!!!!

Maybe I’ll take a picture later on, but it pretty much looks like lasagna except with black beans in it.  I should have added something Central Americanish to the mix, cause then I could call it Guatemalasagna!  That’s got some marketability!
