As I sit here, on a plane to Houston from Chicago. I can’t think of anything but how much I’d rather be eating the dinner I had last night. It was great… Well the salad was the standard mixed greens and honey mustard dressing, but the other two were more interesting experiments. The pepper was stuffed with sauteed onion, garlic, tomato and breadcrumbs, then topped with cheese. The stuffing was good, but frankly I didn’t much care for the pepper. The success of the night, however, was the potato casserole. I am pumped on it because I was totally winging it AND it was good. Potatoes, diced, with chopped onion, mushroom, and garlic, then covered with a can of split pea soup, with a bit of cheddar cheese on top. And a glass of white wine. My sister is not aware that I am coming to visit. Like I said, I am currently on a plane, so I can’t send this. I kinda want to send this as soon as I land, that way it’ll be sorta a reward if she checks my blog in the tiny time window…
